POLLO ALLA DIAVOLA (The Devil's Chicken)

Chicken alla Diavola Recipe

Ingredients (for 4 people)

  • WHOLE CHICKEN 1.5 kg
  • COARSE SALT 1 tbsp
  • CAYENNE PEPPER 1 tbsp
  • BLACK PEPPER 1 tbsp
  • CHILI POWDER 1 tbsp
  • SAGE 6 leaves
  • ROSEMARY 3 stems
  • GARLIC 1 clove
  • OLIVE OIL as needed

Procedure

  1. To prepare the chicken alla diavola, first take a whole chicken and cut it in half using a heavy knife and cutting right between the two breasts vertically.
  2. Remove the central bone and spread the chicken completely apart.
  3. At this point, transfer the salt, aromatic herbs, garlic, and chili pepper into a mixer and blend everything.
  4. Pour into the inside of a bowl, add the olive oil and mix with a spoon to obtain a paste.
  5. Using a meat tenderizer, slightly flatten the chicken. Massage the chicken with the freshly prepared mix, spreading it both on the skin and then inside the chicken.
  6. Grease a large frying pan and let it heat up well. Place the chicken inside and place a weight on top to make sure the chicken entirely touches the pan.
  7. Cook over low heat for about 25 minutes without ever moving it, then turn the chicken and cook for another 25 minutes.
  8. At this point, transfer the chicken to a cutting board and using a chicken cutter, cut it first in half and then into pieces and enjoy!
