Start by heating up a pan with 4 tablespoons of olive oil. Crush your garlic and cook it until golden brown on medium heat.
Turn the heat on high and add your cherry tomatoes, previously cut in half.
When caramelized, add a sprinkle of salt and pepper, a few ripped basil leaves, and the tomato paste.
Give it a quick mix and add 2 cups of water. Set the heat on medium-low and cook for about 25 minutes, or until the tomato sauce releases its acidic flavor. You can also add some sugar to balance the acidity.
Make sure your sauce is nice and thick. Add some water if it’s too dry and vice versa cook longer if it’s too watery.
Finish with an extra touch of olive oil and use your tomato sauce with your favorite pasta!
