In our ABC's of Coffee class we take an in depth look at every aspect of the coffee production process. The class is designed to inform consumers on how to best choose beans and brewing methods based on their preferences.

We start with the botany of coffee: growing, harvesting, and processing the beans.

Then we go over the important, yet often forgotten elements of transportation, storing and blending.

Roasting, grinding, brewing and maintenance is where the consumer or barista really takes charge. We focus significantly on these aspects because it is here, where we can really make the difference between a good cup of coffee and a great one.

Though the class is dense in theoretical knowledge, we try to find the perfect balance between theory and practice. Proper brewing techniques are demonstrated for french press, pourover, espresso, and stovetop. Recipes and nuances are discussed and a tasting is conducted for each method.

I was very excited to find that the class was filled with espresso enthusiasts. We always use a Rocket machine to make espresso in the class but when I found out that everyone was interested in the art of Italian espresso, I decided we needed a treat. We rolled in a commercial Faema E98 machine and everyone had an opportunity to try their hand at brewing and steaming milk on both machines. I think everyone was pleasantly surprised (myself included) to find that the household Rocket was able to produce the same quality of beverage as the commercial powerhouse E98.

I really appreciate the enthusiasm and friendliness that each participant brought to the class. Everyone opened up freely about their cultural experiences and personal relationships with coffee. It was a treat to teach such a passionate and lively group of coffee lovers!
