WILD MUSHROOM AND TRUFFLE SAUCE (Perfect for Pasta)
Mushroom and Truffle Sauce
Ingredients
Shiitake Mushrooms 2 cups
Oyster Mushrooms 2 cups
Portobello Mushrooms 1 cup
Garlic 2 cloves
Parsley 1/2 cup chopped
Butter 2 tbsp
Heavy Cream 35% 1 cup
Olive Oil, Salt and Pepper as needed
Truffle Oil 1 tbsp per person
Fresh Black Truffle 7g per person
Procedure
Start by cutting your mushrooms into 3mm slices. Place them in a bowl and season them with olive oil, salt, and pepper.
Crush the garlic and sauté it in a pan with the butter until golden brown. Add the mushrooms, turn the heat on high, and sauté for 3 minutes or until the mushrooms start browning.
Add the heavy cream and reduce it just enough to leave the sauce slightly liquidy. You can also add some mushroom stock to increase the mushroom flavor.
Add some truffle oil to give it a nice truffle flavor.
Your mushroom sauce is now ready to use and add to your favorite pasta.
Grate some fresh black truffle with a micro plane once pasta is plated and enjoy!
