WILD MUSHROOM AND TRUFFLE SAUCE (Perfect for Pasta)
Ingredients
- Shiitake Mushrooms 2 cups
- Oyster Mushrooms 2 cups
- Portobello Mushrooms 1 cup
- Garlic 2 cloves
- Parsley 1/2 cup chopped
- Butter 2 tbsp
- Heavy Cream 35% 1 cup
- Olive Oil, Salt and Pepper as needed
- Truffle Oil 1 tbsp per person
- Fresh Black Truffle 7g per person
Procedure
- Start by cutting your mushrooms into 3mm slices. Place them in a bowl and season them with olive oil, salt, and pepper.
- Crush the garlic and sauté it in a pan with the butter until golden brown. Add the mushrooms, turn the heat on high, and sauté for 3 minutes or until the mushrooms start browning.
- Add the heavy cream and reduce it just enough to leave the sauce slightly liquidy. You can also add some mushroom stock to increase the mushroom flavor.
- Add some truffle oil to give it a nice truffle flavor.
- Your mushroom sauce is now ready to use and add to your favorite pasta.
- Grate some fresh black truffle with a micro plane once pasta is plated and enjoy!
