ROMAN STYLE DANDELION
Roman Style Cicoria Recipe
Ingredients
- Fresh Dandelion 1 bunch
- Garlic cloves 2
- Olive oil 2/3 cup
- Chilli flakes a sprinkle
- Sea Salt as needed
Procedure
- Bring a pot filled with roughly 2 inches of water to a boil, add a nice sprinkle of salt. Remove half inch from the rapini stems.
- Have ready a little ice bath to immerse the rapini once they’re blanched.
- Once water is boiling, add the rapini and boil for 3 minutes or until the stems start to soften.
- Remove the rapini from the pot with tongs, strain them, and add them to the ice bath to cool. Then strain and pat dry with a paper towel.
- In a pan, add 1/2 cup of Olive Oil, 2 crushed garlic cloves, and the chilli flakes, and sauté on medium heat until garlic starts to golden.
- Turn the heat on high and add the rapini and toss well for 1 minute. Once the stems are soft and the rapini absorbed all the olive oil, plate and eat.
