Mix 150g of 00 Flour and 50g of Semolina Flour together until they are perfectly combined.
Break 2 eggs into a bowl and mix them until combined.
Add half of the flour mixture to the eggs and mix until combined. Gradually add more flour until the dough starts coming together.
Move the dough to a surface and knead until all of the flour is absorbed. If your dough is too hard, add a little bit of water. If it's too soft, add more flour.
Knead the dough for about 10 minutes or until it becomes smooth and elastic. Sprinkle some extra flour on the cutting board if needed to prevent sticking or if the dough seems too wet or sticky.
Form the dough into a ball with your hands, wrap it in plastic wrap, and let the dough rest at room temperature for 30 minutes.
After resting, use the dough immediately or refrigerate for up to 1 day.
When ready to cook, cut the dough into fettuccine strips.
