Chronicles of The Travelling Master Barista: Treizième Boulangerie

Treizième is a brand new French bakery in Oakville, Ontario and it’s definitely worth getting excited about! It is an open concept boulangerie with large windows that bring a tremendous, welcoming light into the restaurant. By far my favourite aspect of Treizième is the transparency of the bakery. Located in the centre of the restaurant, surrounded again by large windows is the kitchen. Customers can look into the kitchen to see head chef Virgyl whipping up the day’s pastries, sandwiches, salads, and more.
As you walk in, you immediately encounter a clean, pastry-lined espresso bar and a smile from the barista. The triumphant E71 that sits on the bar is your first indication that you will enjoy sipping on their coffee. Possibly the most decadent part of the experience was the chocolate sauce used in the café mochas. It is the same delicious sauce used in the pastries and the rich flavour is unmatched!
When I met barista Anastasia, she was excited for me to try their locally, independently roasted beans. I loved the fruity brightness of the single origin roast and helped myself to several espressos during my visit. I was also lucky enough to try the leek pastry, which I must admit, I devoured without shame.
Head chef Virgyl and owner Nabil have created restaurant with all the telltale signs of a traditional French bakery, from classic French desserts, to the delicate aromas that entice you from the moment you enter.
